In the days before fridges, three platefuls of this broth was considered the best pick-me-up after a long, cold winter devoid of fresh greens. Though cooks operated on instinctive wisdom which was handed down from one generation to the next, we now know that nettles are one of the richest sources of iron and increase red blood cells, making us feel better.
