Cook’s Tip: Blending to a smooth texture will give the most intense mushroom flavour.

Ingredients

  • 50 g (2 oz) butter
  • 2 medium onions, chopped
  • 1

Method

Making

Melt the butter in a large pot and add the onion. Add the salt and cook slowly until the onion becomes transparent. Add the celery and potatoes and continue to cook over a low heat for another five minutes. Add the mushrooms and continue to toss in the butter for another few minutes. Add the stock or water, bring to the boil and simmer for about 15 minutes or until the potatoes
