Cook’s Tip: Though the fillet is the most tender steak, it is also the one with the least fat and therefore the least flavour.

Ingredients

  • 4 x 200-225 g (7-8 oz) grilling steak (sirloin, rib eye or fillet)
  • Oil for brushing
  • Ground black pepper<

Method

Preparing and Grilling

Preheat the grill to a high heat. Brush steaks with oil and season with pepper. Grill on both sides, turning every few minutes for 5-10 minutes depending on thickness.

Test for Doneness

Still bouncy when pressed with turning tongs = rare; slightly firm = medium rare; very firm = well-done.
