Cook’s Tip: A dish for small, slender young leeks that have a delicate flavour. They may also be added to other raw salads. Allow about two leeks per person depending on size.
Put the dressing ingredients into a screw-top jar and shake well. Taste for seasoning. Clean the leeks and then chop them into one-inch slices. Put in a salad bowl and toss in the dressing. Good with cooked ham, spiced beef, mutton ham or pickled tongue.
