Marzipan for 1 large size cake

  • 500 g (1 lb 2 oz) ground almonds

Method

To Make

Put the ground almonds, caster sugar and icing sugar into a mixing bowl and blend together. In a separate bowl, beat the eggs with the lemon juice, sherry and vanilla. Add to the almond mixture in three lots, beating on slow speed between additions (or mix by hand: make a well in the almond mixture and add the egg mixture. Knead in the liquid till the mixture comes together).
