I began Cocolat with these simple, classic, cocoa-dusted dark chocolate truffles. Although we’ve developed over a hundred variations since then, these are still my favorite! They make a rare and exquisite gift.

Ingredients

  • 8 ounces semisweet or bittersweet chocolate, cut into bits
  • 3 ounces sweet butter, cut into pieced

Method

  1. Melt chocolate with butter and ¼ cup water in a bowl set in a barely simmering water bath. Stir from time to time until mixture is melted and smooth. Or, microwave on medium (50%), stirring once or twice, for about 2 minutes. Off heat, whisk in the egg yolk just until incorporat
