Tangy bright red berries partner chocolate and crème fraîche in Cranberry Christmas Cake. Use them to make a “fresh” fruit tart in the middle of winter, or substitute for fresh berries wherever you like. The syrup makes a delicious soda.

Ingredients

  • 2 cups cranberries, rinsed and picked over
  • cups sugar

Method

  1. Place cranberries in the heatproof bowl; set aside. Bring about 2 inches of water to a simmer in the steamer.
  2. Meanwhile, combine sugar and ¾ cup water in a small saucepan. Stir just to moisten sugar. Cover and bring to a boil. Pour boiling syrup over cranberries; weigh
