White Chocolate Glaze partners fruit and chocolate combinations, such as Italian-Cherry Torte, beautifully. The sweet white chocolate picks up the sweetness and offsets the tartness of the fruit. White Chocolate Glaze, like the Mocha Glaze, is thick and sticky; plan to press nuts or chocolate shavings against less-than-perfect sides. White Chocolate Glaze requires an extra-thick crumb-coat so that the dark cake will not show through the white glaze.
