For Small Batch

  • 10 ounces semisweet, bittersweet, milk, or white chocolate, cut into small bits

Method

  1. Combine chocolate and water in small bowl placed in a saucepan of barely simmering water. Stir chocolate frequently to hasten melting. Or, melt the chocolate and water gently in a microwave on medium (50%) for 1 minute and 45–50 seconds for dark chocolate, on low (30%) for about 2 minutes for milk or white chocolate. Remove from heat and stir until smooth. Cool to barely
