  • About

Cooking food in a paper bag, or on papillote, is not only fun - it also makes good sense, because all the intense delicious flavour of these baby vegetables bathed in herb butter is contained in the parcel until the moment when you tear into the paper and the aroma bursts forth.

Ingredients

  • 450 g (1 lb) mixed baby vegetables such as baby leeks, baby sweetcorn, broccoli and cauliflower florets, carrots

Method

Prepare the vegetables by washing and trimming as necessary. Place the faggots of herbs in a steaming basket and arrange the vegetables on top. Steam the vegetables until almost cooked, then remove from the basket and season lightly, if desired, with salt.

Cream the butter with the chopped herbs and add lemon juice to taste. Place a sheet of baking parchment on the work surface, fold it
