Small orange kumquats, sliced into circles, make a fine-flavoured marmalade with the added interest of chopped angelica leaves which act as a ‘sweetener’ to the sharp citrus taste of the fruit.

  • 1 kg ( lb) kumquats
  • 600 ml (1

Method

Wash and dry the kumquats. Use a sharp knife to cut each kumquat into thin slices. Remove the pips and place them in a muslin bag. Place the fruit in a pan with the water and bag of pips. Bring to the boil, then simmer for 30-40 minutes or until the peel is tender.

Measure the contents of the pan and add 450g (1lb) of sugar for every 600ml (1 pint) of fruit pulp. Stir over low heat unti
