The avocado gives this smoothie a lovely creamy texture and also makes it a sustaining start to the day.
Put the avocado, lettuce, baby leaves and mint into a blender with half of the water and process until smooth. Add the remaining water as required and blend to achieve your preferred thickness. Stir in a little lemon juice and sugar or maple syrup, to taste.
