This makes a lovely breakfast or brunch dish served with thick vegan yogurt (opposite page).
Put all the ingredients into a medium saucepan, cover with water and leave to soak for 2–3 hours.
Set the pan over a low-medium heat and simmer the mixture, uncovered, for about 30 minutes, until the fruit is very soft and tender and the water has almost disappeared.
Let cool before serving.
