So simple, so delicious – melting, tender potato slices and tasty fried onion encased in a crisp chickpea-flour batter – the perfect dish for brunch or anytime snacking. It does take a little time to cook to perfection, but it’s easy to do and well worth it. We love it with mango chutney. You need a large, fairly light frying pan (skillet) that you can turn upside down to flip the frittata over. I love it with some sweet mango chutney and, if there are leftovers, it’s also great cold.
