Golden brown, crisp on the outside and tender within, who doesn’t love fried potatoes? And they’re so easy to make.


  • 4 medium potatoes, peeled and sliced or cubed, as desired
  • olive oil, for frying
  • salt and freshly ground black pepper, to taste


Put the potatoes in a saucepan, cover with water and bring to the boil. Parboil for about 5 minutes until you can pierce the potatoes easily with the point of a knife: this will depend on the size of the pieces; they need to be tender but still firm enough not to break up. Drain well.
