Although hummus is widely available, it’s very easy to make your own. You can also save the liquid from the chickpeas (garbanzo beans) – known as ‘aquafaba’ – for its use in other recipes, such as Meringues.
Put the chickpeas and 2–3 tablespoons of their reserved liquid into a food processor or the goblet of a hand-held (immersion) blender, along with the olive oil, tahini, garlic and lemon juice. Process until smooth, adding more liquid as necessary to obtain the creamy texture you prefer. Taste and add a little salt or lemon juice, as necessary.
