Cauliflower ‘steaks’ are one of my favourite dishes and so easy to make. You do need a firm, not too large cauliflower, and you will only get about two, or at the most three, steaks out of it, because the florets around it will become detached from the core. Here, the steaks are roasted and served with a topping of saffron mayonnaise, but they can also be topped with other delicious things: try slices of roasted pepper or a splash of Red Pepper Sauce; some Pesto; or fried wild or button mushrooms.
