Such a simple dessert, but one that really does have the ‘wow’ factor when it’s well made with a variety of pretty fruits and served with Golden Crunch Biscuits and a generous amount of coconut cream.
Holding the oranges over a bowl to catch the juice, use a sharp, serrated knife to cut off the peel and white pith, going round and round with a sawing motion. Cut the orange segments away from the white inner pith and add to the bowl.
Halve the melon, scoop out and discard the seeds, then scoop the flesh away from the skin using a melon-baller or knife and add to the bowl.
