This is an easy-going dish, a simple fry-up that can include any greens to hand – chard, cavolo nero, shredded sprouts – and is improved by the inclusion of a little meat – a ladleful of leftover stew, scraps from the Sunday roast, diced bacon or chorizo. Any leftover pulses can replace the chickpeas – I love it with black beans.
