White beans cooked the Mediterranean way, with soft chorizo for substance and olive oil as enrichment... this is no-fuss everyday cooking, healthy, simple and cheap. Cheaper still if you grow your own beans, harvest your own chillies and prepare your own chorizo with meat from the household pig.


  • 250 g white cannellini or butter beans, soaked overnight

Drain the beans and put them in a large saucepan with enough water to cover generously – at least 1 litre. Bring to the boil and skim off the grey foam that rises.
