Use up any shelled hazelnuts in a brittle. Unshelled hazelnuts can be roasted in the shell for longer storage, a preventative measure that improves the flavour and stops any danger of rot. Hazelnuts are the most vulnerable of all tree nuts to damp conditions – ask the squirrels.

Ingredients

  • 250 g shelled hazelnuts
  • 250 g caster sugar

Method

Preheat the oven to 150°C/300°F/Gas mark 2.

Oil a baking tin and set it by the side of the stove. Toast the nuts in the oven for 20 minutes
