Here’s what to do with bara brith when it’s no longer in the first flush of youth. You’ll need a very low oven or the custard will curdle and split. Should this happen, pour in a little more cream before serving.

Ingredients

  • About 600 ml full-cream milk
  • 2–3 tbsp double cream

Method

Fork up or whisk the milk, cream and whisky (if using) with the egg yolks and a tablespoon of sugar till well blended.

Preheat the oven to 140°C/275°F/Gas mark 1. Butter a medium-sized baking dish.
