A rich, buttery pastry topped with apple slices and creamy custard, this is a recipe from the Black Forest – similar climate, similar attitude to self-reliance.


  • 400 g strong unbleached white bread flour
  • 50 g fresh yeast or 2 tsp


Set the dough ingredients out ahead of time in a warm kitchen so they are room temperature. Sift the flour into a warm bowl, reserving a handful (about 50 g).

If using fresh yeast, crush it with the sugar with the back of a spoon till it liquidises, then work in a cupful of the warm milk. Sprinkle with a little flour and leave for 10 minutes till the surface starts bubbling. If using dr
