To ‘cobble’ is to throw something together quickly, which is about all I’m prepared to do in high summer. You can make a cobbler with gooseberries, currants, apricots, peaches, apples, blackberries, blueberries, rhubarb or any other fruit you would use in a pie.

Ingredients

  • 6–8 large juicy plums, split and stoned
  • 1 tbsp plain flour
  • 100 g

Method

Preheat the oven to 220°C/425°F/Gas mark 33.

Roll the plums in a mixture of the flour, sugar and cinnamon. Arrange them in a deep pie dish and leave in a cool place while you make the topping.
