An economical dessert, this made its first appearance in Victorian times as Hydropathic Pudding, a wholesome dish for ladies of delicate constitution obliged to endure the cooking of a landlady while consuming spa waters for their health. Since spa waters are nasty stuff and horribly sulphurous, the pudding ranked as a treat. Make two at a time when the berries are in season: once assembled, the puddings freeze perfectly.
