Tuscan cooks, an independent bunch, combine mint with eggs in a frittata, which may be why the combination appeals to the Italian community in Perth, Australia, which is where I came across this recipe. The alternative flavouring is sage, but mint (the little-leaf peppermint is preferred to our own large-leaf variety) is particularly refreshing on a summer’s day.
