The simplest way to produce fluffy white rice is to cook it in a closed pan with just enough water to allow the grains to swell. There’s a little trial and error involved – the size of the pan in relation to the volume of rice can alter the equation. You’ll soon discover what works for you and then you’ll never look back. My favourite curry powder is West Indian Bols, which comes in both hot and mild versions. I usually combine the two.
