If your pears are still unripe and too hard to eat raw, poach them in a sugar syrup flavoured with ginger.

Ingredients

  • 4–12 hard pears, depending on size
  • About 12 fresh walnuts, unshelled
  • piece of fresh root ginger

Method

Carefully skin the pears, halve and core them, then set aside.

Crack the walnuts, extract the two halves of the nut and peel off the bitter outer skin. Set aside.

Simmer the ginger in a mugful (about 300 ml) of water in a roomy pan for about 20 minutes, till the water is well flavou
