Ingredients: 75 g plain flour; 2 large eggs, forked to blend; Juice and finely grated zest of 1 unwaxed orange; 250 ml stout or any dark beer; 1 tbsp black treacle; 1 tsp ground cinnamon; 125 g blanched almonds, roughly chopped; 125 g prunes, stoned and chopped; 125 g dried apricots, diced; 125 g mixed crystallised peel, chopped; 150 g sultanas; 150 g currants; 125 g dark muscovado sugar; 125 g unsalted butter, melted; 150 g fresh breadcrumbs; Small glass of brandy, warmed to finger heat, to flame; ½ tsp freshly grated nutmeg; ½ tsp ground cloves; 1 mature carrot, scraped and grated; 1 large cooking apple, peeled cored and grated
