Replace half or all of the olive oil with fragrant walnut or hazelnut oil. Replace the wine vinegar with sherry vinegar. The toasty, nutty flavor that comes from both the oil and the sherry vinegar complements a lot of different foods, but I especially like this in a savory salad with crisp greens and shavings of a nutty cheese like Parmigiano-Reggiano or Vella Dry Jack.
