Ingredients

  • 1 cup diced firm ripe mango
  • ¼ cup finely diced red onion, soaked briefly in ice water and drained
  • 2 tablespoons finely diced red bell pepper
  • 3 tablespoons fresh lime juice
  • 1 teaspoon finely minced jalapeño chile, or to taste
  • 2 teaspoons peeled and finely minced fresh ginger
  • 2 teaspoons olive oil
  • 2 tablespoons coarsely chopped fresh cilantro leaves
  • Salt to taste
  • Drops of honey to taste

Method

Combine all the ingredients and set aside for 30 minutes before serving to let the flavors develop. Store covered in the refrigerator for up to 2 days.
