This version of Southern Fried Chicken is delicious enough to grace a dinner party. The chicken is sauteéd in butter and oil, which makes the skin brown and crunchy and gives it a wonderful flavour. Even the most finicky child will want ‘seconds’. The cream gravy is the traditional accompaniment but I love it just with a squeeze of lemon.
