No one seems to know how this cake came by its name. Perhaps with the invention of Angel Food Cake there had to be a Devil’s Food Cake. Whatever its origins, it well deserves its fame. It is a scrumptious cake – chocolaty, moist and light and amazingly easy to make successfully. I love it with chocolate soured cream frosting, which is also quickly made: if you have more time, try fudge icing (see variation of Chocolate Fudge).
