In the eighteenth century peanut crops were recorded by Thomas Jefferson in his plantation ledger, but it was not until the next century that peanut cultivation was widespread and it became such a popular food. Even if you are not a fan of peanut butter these cookies will convert you. They are crunchy and crumbly and have a wonderful flavour. A great favourite in my household.
