Americans make very good cookies and these are no exception. They are quick to make and have a thin lacy elegance. Perfect with fruit or ice cream.

Preheat the oven. Mix the oats, brown and white sugar and flour in a bowl. Melt the butter and pour it into the centre of the dry ingredients. Stir in the beaten egg and vanilla and then fold in the nuts. If you have used unsalted butter, add a good pinch of salt.
