‘Bogland medicine’ made from the cranberry, rich in vitamin C, was carried in barrels on the early colonists’ ships to prevent scurvy. They were also known at this time as bounceberries, since they were, and still are, tested for their ripeness by their ability to bounce. Cranberry-Orange Relish is a beautiful red colour and its tart flavour is a delicious accompaniment to poultry or pork.
