This makes the most wonderfully creamy, chocolate fudge imaginable. English fudge is of ten granular in its consistency but this is a rich, smooth, American-style fudge. The trick is to cool it slightly before beating in the cocoa and quickly pour it into a tin before it sets. It cannot help but be your favourite once you have tasted it.
