Golden peanut-encrusted brittle is fun and very easy to make. This beautiful caramel-coloured candy is a special delight for children. I find it very nice to have on hand, particularly at holiday time.
Grease a baking sheet or a kitchen worktop (the ideal surface is a marble slab). Mix the sugar, syrup and water in a heavy saucepan and cook over a low heat, stirring until the sugar is completely dissolved. Raise the heat slightly and boil the syrup, uncovered, until it reaches a temperature of 295°F/145°C on a sugar thermometer or until a little of the syrup turns very brittle in cold water.<
