  • 15 ml spoon (1 tablespoon) wine or cider vinegar

Method

Whisk the vinegar with the sugar and salt and pepper, using the mustard if the oil is groundnut. Then whisk in the oil. Vinaigrette will separate if it is left standing around. This does not matter if the salad is to be turned.
