Small fila pastry pies, filled with spinach and cheese, with meat or with almond paste, are a delight of much of the Mediterranean. Sometimes they contain a whole egg. They come with the meze, and are eaten as a snack. Once you learn the technique, you can make variations of your own. Even a spoonful of jam with some chopped almonds makes a good filling.
