Basic recipe: Tomato Sauce
This dish will be familiar to anyone who has visited Majorca. Variations are often made on this very basic idea. Some people add in minced, browned beef in layers, others add a layer of fried courgettes or onions. The peppers can be green or yellow, rather than red. You can add beaten eggs to the sauce, to make it firmer and the dish more nourishing. Grated cheese between each layer is another idea.
