As their name suggests, these melt-in-the-mouth biscuits with their soft butter cream and jam filling are simply irresistible.


  • 250 g (8 oz) unsalted butter, at room temperature

  1. Preheat the oven to moderate 180°C (350°F/Gas 4). Brush two baking trays with melted butter. Using a wooden spoon or an electric whisk, cream together the butter, icing sugar and lemon rind until light and fluffy.
