Method

Preheat the oven to moderate 180°C (350°F/Gas 4). Brush two baking trays with melted butter. Using a wooden spoon or an electric whisk, cream together the butter, icing sugar and lemon rind until light and fluffy.
Add the egg yolks and mix thoroughly.
