‘Tuile’ is the French word for tile. These biscuits are shaped to represent the slightly rounded, overlapping tiles found on many European roofs, especially around the Mediterranean.

3 small egg whites
80 g (2¾ oz) desiccated coconut

Method

Preheat the oven to moderately hot 190°C (375°F/Gas 5). Brush two baking trays with melted butter and refrigerate.
Lightly beat the egg whites with a fork to loosen them. Add the coconut, caster sugar, flour and butter and stir together.
