These vanilla-flavoured macaroons, crisp on the outside with surprisingly soft, moist centres, can be sandwiched together with different flavoured fillings, such as fruit jams or melted chocolate.
Place two baking trays together and line the top tray with baking paper (this double thickness tray will prevent the bottom of the macaroons overbrowning during cooking). Preheat the oven to warm 160°C (315°F/Gas 2-3).
