  • 1 lb/450 g salt cod, soaked overnight and drained
  • ½ pt/300


Place the fish in a pan with plenty of cold water, slowly bring to the simmer, skim, and poach gently for some 10–15 minutes until tender, then remove onto a dish.

Meanwhile, simmer the remaining ingredients for 10 minutes and pour over the fish in the dish, or serve with the following sauce.
