Grill the steaks for 2β3 minutes on each side in order to slightly brown and part-cook them.
Remove the steaks to a shallow pan, add the chopped parsley and salt, cover with boiling water, and simmer very gently for 3β5 minutes until still tender, but cooked through.
Drain the steaks, leave to go cold, then garnish with the sprigs of parsley freshly rinsed in the vinegar.
