Method

Sift the dry ingredients into a bowl, make a well in the centre, break in the egg, begin to beat in the flour, adding the water or milk little by little to form a smooth batter. Set aside for 30 minutes or more.

Peel the apples, cut in ¼-inch/5mm slices, dip in the batter, and deep-fry in the lard or oil at 180°C/350°F for 2–3 minutes, until golden brown.
