As brawn fries, but using thin-sliced wholemeal bread instead of the brawn.

In one of the most popular of medieval fried foods, the batter was replaced by beaten egg yolks. Pain perdu, ‘lost bread’ or, as it is better known today, ‘eggy bread’, was simply a slice o
