  • 8 oz/225 g dates, stones removed
  • 4 oz/100

Method

Grind the dates to a smooth paste (it is easier to chop them finely and then knead them smooth).

Boil the honey to 120°C/250°F on a sugar thermometer, pour into the dates in a small bowl, and rapidly work in with the ginger. Pack into a shallow box from which it may be cut as required.
