Ingredients

  • 1 lb/450 g honey
  • 1 tbs ground ginger

Method

Boil the honey to 130°C/265°F, pour out on to a lightly oiled marble slab, and sprinkle with the spices.

Use a lightly oiled metal spatula to work the spices into the honey then, when just cool enough to handle, form into a roll. Grasp this at each end, stretch it, double it, and stretch it again, repeating the process ten times.
